The New England style of India Pale Ale is brewed with low bitterness but still uses a huge amount of hops. Varieties used are added late in the brewing process to promote a tropical, juicy sweetness without harsh bitterness. Using this as a base, we fermented on strawberries (7kg per keg), which add a slightly astringent, strawberry fruit tartness. We then infused the beer with the finest Madagascan Vanilla Beans, which add a luxurious sweet vanilla note. The 3 elements have been skilfully combined, to produce a beautifully balanced ale, that belies its strength.
