They say imitation is the sincerest form of flattery – in which case, the crew at De Koninck Brewery in Antwerp would likely be chuffed with this. And while our Tripel D’Adelaide is by no means a frame by frame remake of their award-winning Tripel D’Anvers, it most certainly is, as our Head Brewer Lewy puts it, an homage…
Pilsner Malt and oats lend a sturdy foundation and striking golden hues. It’s a blonde, meaning the body is brisk and the carbonation bright, but there’s still loads of chewy bread and honey notes there, too.
Like all good Belgians, it’s the yeast which binds the offering. The WLP530 Abbey Ale strain from White Labs more than delivers here, providing all the archetypal characters you’d expect - not to mention a 7.5% ABV.
Pear drop, orange zest, banana, and spicy phenols are all present, wafting steadily from a thick, meringue-like head. On the palate, we find a well-balanced marriage of the above, resulting in an exuberantly complex, yet ultimately refreshing froth.
Pair with mussels and hot chips.

Mosaic Gluten Free Pale Ale, developed to showcase the amazing aromas and flavour of the Mosaic Hop. Apricot Sundae Sour is a fruity treat of a brew. We’ve added wheat, oats and lactose to give the kettle soured base creamy notes and a thick mouthfeel. Lashings of apricot purée are added during fermentation, then everything is rounded off with almonds and vanilla.
