This is one of those beers where we had the name first and had to make the recipe to taste like the name. It was about capturing that time of the year when things are festive, its holiday time and you are feeling good. Its sunny, its warm, and you have your party shirt on. When you have your Party Shirt on you know life is good. So we decided to take that feeling and put it in a can.
A can of delicious hoppy goodness. Being a summery beer, we used a blend of Pilsner and Pale Ale malts to keep the beer colour on the light side. The flavour we wanted from the hops came from another potential name for this beer: Fruit Salad on a Stick, a follow on from IPA on a stick. We can get a bit silly with beer names.
Thinking fruit salad, Amarillo's peachy ripe summer stonefruit characters immediately jumped to mind, especially after how good it is tasting in Hopshine right now. Mosaic is just a mosaic of fruity hoppy goodness, which makes us happy. And finally a new trial hop HBC (Hop Breeding Company) 685 which has aroma descriptors of fruity, tropical, stonefruit, citrus, floral & pine. We have created a winner. This beer is kind of like what you enjoy in a Hazy IPA but without it being Hazy.
