  This beer is all about the yeast. It pours a hazy, straw colour with a soft billowing head. The aroma is earthy and funky, with notes of banana, citrus, pear and black pepper. The flavour is crisp and dry, but it retains a grainy, malty sweetness that compliments the yeast profile. On the palate there are earthy flavours, citrus and pomme fruits, cracked pepper and a slightly tart effervescence that is very refreshing. It lacks the assertive bitterness that is often seen in other modern examples, but is otherwise an excellent interpretation of a traditional style.
