We took a modern style as our base, but used a crazy-old Belgian yeast to twist it sideways. The beer is light-bodied, and presents with a lovely copper colour. It's lively on the nose, with a seamless integration of the yeast and hop characters giving notes of pepper and stonefruit. The malt is delicate, textured, and nicely backgrounded against the tartness from the yeast and the mild bitterness of the hops.
