We were lucky enough to once again host our good mate Matt from Fast Fashion over in Seattle who this time brought us a very special gift - Fast Fashion’s very own proprietary hop - named Anchovy.
Don’t let the name fool you as much as it confused brewer Boogie when he tried to return it to our kitchen staff, this isn’t a hop known for a salty, fishy flavour. Despite its memorable name, this unique and extremely rare hop is all about watermelon lolly top notes and a piney, earthy undertone.
The name is another gift from Matt. Last time he visited Katoomba, each section of wall was still painted a different colour from its Civic video days and the remnants of Harriet and DJ’s belongings were still evident in the upstairs offices. This time, Matt became infatuated with our half-a-plane and the story of how it got there. That, and the fact he had his Anchovys express air posted to our Katoomba brewhouse led to him exclaim halfway through brewing that this West Coast IPA would be called Business Class.
