The name 'bière de garde' roughly translates to 'beer for keeping', a reference to the old practice of brewing a stronger beer to store as provision for the warmer months of the year, when conditions were not as hospitable for brewing.
The aroma is very warm and comforting. Elements of cherry cola, burnt toffee & pinot noir. The palate is light but it carries a gorgeous depth and richness with it. Spice, slightly burnt toast and port royal. There is a subtle acidity that drives the existing flavour components. This beer is very nostalgic for Hannah & I. Takes us back to a time in our youth of sipping jugs of raspberry and coke at the local pub with our families. A special beer that is drinking beautifully right now but will be rewarding to cellar.
Brewed with 100% Australian grown grains. Floor malted - Australian ale, munich & raw wheat from House of Malt (VIC). Australian flaked barley & a small percentage of chocolate malt. Lightly hopped w/ EKG (UK) & Tettnang (DE) to 16 IBU. This beer was boiled for 3 hours as was done traditionally to achieve kettle caramelisation. This imparts colour and flavour which is only achieved through this process. Apart from a small percentage of chocolate malt the colour is completely boil derived. Primary fermentation occurred in a puncheon and a barrique for 10 months with a blend of lager, saison yeast and brett. lambicus. This was fermented cooler at around 14-15 C to restrain ester formation and accommodate for the blend of lager and saison. This is a 60/40 blend of the puncheon and barrique. The puncheon portion was not inoculated with brettanomyces to tame the funk in the final blend.
Packaged on March 6th 2022 and bottle conditioned for 9 weeks.
