A collaboration with our friends and honey superstars Tim and Emma from MALFROY'S GOLD WILD HONEY. Hive: Post Brood is a barrel aged golden mixed culture beer refermented with natural formed Warré hive post-brood wild comb from the Blue Mountains and Central Tablelands of NSW. Each bottle is dipped in the same wax post-refermentation in this beer, there may be small residue still of propolis in the wax leaving black specks in the golden yellow beeswax.
This is a beer made with comb, not honey directly. We have yet to find anything else like it... the honey flavour is just lovely, nutty, spicy. This sixth blend of working with post-milling and straining honeycomb that has spent 3-6 years in hive works mainly with comb originally from a Yellow Box honey flow but then capped with propolis and bee bread (fermented pollen) over subsequent years giving it the distinctive 'post brood' flavour.
Luke's tasting notes - Typically heady and expressive aromas of orange marmalade, stewed stone fruits, honey and propolis. There’s a floral forestry edge that lifts the nose high. Huge flavours of honey and dark spice are cut through by a wave of bright citrus before the honey returns alongside a menthol edge. Incredible length, intensity and concentration. Beeswax and spice to close.
Like all our beers, Hive: Post Brood Blend #6 is best enjoyed when decanted off a settled natural yeast sediment at cellar temperatures (10-12°C).
