It's been too long since we last had a green bottle offering. This saison-inspired ale showcases organic raw spelt we received from Whispering Pines organics in the Riverina. In the past I have shared my love for the Brasserie de Blaugies Saison d'Epeautre, a spelt dominant saison... the beer served as the initial inspiration for our Solera recipe. In the middle of last year, however, we decided to empty the foudre that was holding solera and released it bringing an end to a 3 year project of continually emptying and refilling this large barrel with a spelt beer. The Vibe of the Thing, this spelt young beer, continues where Solera left in an exploration with spelt. We brewed this beer in August 2020 just before starting our coolship season in the Blue Mountains. Instead of a normal fermentation in oak or stainless steel, we decided to knock it out into the coolship itself and start fermentation in the open. As it had been inoculated with our house culture, this is not what is considered a spontaneous fermentation, just an open fermentation. After a few days in the coolship, we transferred the beer into a stainless steel vessel for a two month maturation before bottling in October 2020. The beer rested in bottle for 4 months before release in Feb 2021. It fermented down to 0.6 deg P and is 4% ABV.
