What's the difference between stout and porter?

Historically, stout was simply a stronger version of porter, and the two share a similar dark, roasty character built on roasted malts. Today the lines are blurrier, but porters generally lean smoother and more chocolatey, while stouts tend to be fuller-bodied with more pronounced roast and coffee notes. Both sit firmly in the dark beer camp.

What is an imperial stout?

An imperial stout is a bigger, stronger take on a traditional stout, typically higher in alcohol and more intensely flavoured, often with notes of coffee, dark chocolate, dried fruit and sometimes bourbon or whisky barrel character. They're best sipped slowly rather than sessioned.

What makes a beer a dark lager rather than a stout?

Dark lager is brewed using lager yeast at cooler fermentation temperatures, giving a cleaner, crisper profile than a stout or porter, which are both ales. It still carries roasty, malty character, but with less body and a smoother, more refreshing finish.

Is Belgian dark ale the same as a stout?

No. Belgian dark ale, like the Trappist beers from Rochefort and Orval, gets its complexity from Belgian yeast strains that produce fruity, spicy esters, alongside dark malt character. It's a different flavour profile to the roasted, often coffee-forward notes of a classic stout.

What food pairs well with dark beer?

Dark beer's roasted, malty character pairs beautifully with rich, hearty food. Think slow-cooked beef, barbecue, aged cheddar, dark chocolate desserts and smoked meats. Belgian dark ales also work well with game and rich stews.
