Hop Detective is a can-conditioned Hazy IPA brewed for our 3rd birthday celebrations. We were especially excited to be able to ferment it with locally sourced yeast from Mogwai Labs, a new Wollongong based yeast lab. We used their Sherlock strain, which is a classic English yeast that promotes a soft balanced body and fruity esters. The Citra and Motueka hops were used both in the whirlpool and for a double dry hop giving the beer intense citrus and tropical fruit notes.
